Long before my time. Well, maybe not long. But definitely before.
There is nothing like a NY area bagel. We had a variety of local shops to choose from in the area of NJ where we lived, and I did get bagels in NY when working.
Haven't found the equivalent in Arizona, although the chain Bruegger's makes tasty bagels. They just are not quite as good as we had in the NY area.

I think the NY City drinking water, which comes from upstate NY, is part of the bagel, pizza and bakery magic of NYC? www.newyorkdaily.net/where-does-new-york-city-water-come-from/#:~:text=Most%20of%20New%20York%20Citys%20drinking%20water%20travels,water%20to%20over%209%20million%20New%20Yorkers%20daily.
